Basil Lime Chicken and Thai Cucumber Salad

Prep time/cook time: 45 minutes total for both (plus chicken needs to marinate for minimum 2 hours) *just chicken = 30 minutes *just cucumber salad = 15 minutes

Basil Lime Chicken Ingredients:

  • For Chicken:
    • 2-3 lbs chicken breast
    • Marinade:
      • 2 limes, juiced
      • 3 tbsp olive oil
      • 3 tbsp dijon mustard
      • 3 tbsp Worcestershire sauce
      • 2 thinly sliced green onions
      • Salt and pepper to taste
    • For Sauce:
      • 1 lime, juiced
      • 1/4 cup olive oil
      • 2 thinly sliced green onions
      • 2-3 tbsp chopped basil
  1. Mix marinade ingredients. Pour over chicken breasts in a bag. Refrigerate for at least 2 hours, up to 24.
  2. Grill chicken breasts. Roughly 7-10 minutes on each side until cooked.Chicken on the grill
  3. While chicken is grilling combine sauce ingredients in a bowl.

Chicken sauce4. Slice chicken and pour sauce over it. (Works best if sauce is used on individual portions after it is plated.) Enjoy!

 

Thai Cucumber Salad Ingredients:

  • 1 large cucumber
  • 1 small carrot
  • 2 thinly sliced green onions
  • 1/8 cup peanuts
  • For sauce:
    • 2 tbsp rice vinegar
    • 1/2 tsp sesame oil
    • 1/4 tsp salt
    • 1/4 tsp red pepper flakes (more if you want it to be hotter)
    • 1 tbsp sugar
  1. Spiralize the cucumber. (Seedless is less messy. We used cucumber from our garden and then just cleaned up the seeds.)

5. Top with peanuts. Enjoy!
